Winery of the D. Cava and D.O. Penedès, making both sparkling and still wines since 1986.
The winery makes a wide selection of cavas from the Pla del Penedès, using the 3 native varieties of the region: Macabeo, Xarel·lo and Parellada, planted in sand and calcareous soils, poor in organic materials, resulting in excellent base wines for Cava. These same wines undergo a second fermentation in the bottle (méthode champenoise) to create fine Mediterranean sparkling wine.

Blend   Xarel·lo, Macabeo and Parellada

Ageing    Minimum 12 months sur lees

Tasting note   Pale lemon. This cava has a fine bouquet, with a white floral and fruity ( fresh green apple, pear, peach) character. Smooth, elegant texture. A little touch of sugar at the disgorging (+/- 8g/L) balances the acidity. Serve at 6-8ºC (43-45ºF). The cava for toasts, celebrations, aperitifs and light meals.

Blend Xarel·lo, Macabeo and Parellada

Ageing  2 years sur lees

Tasting note  Pale gold. Aromas of fresh and ripening fruit, White flowers and complex notes of Ageing sur lees. The fine, integrated bubbles add silkiness to the ripe pear and apple and yeast notes. A versatile cava, perfect for special celebrations, poultry, cream sauces and lighter desserts.

Blend Xarel·lo, Macabeo and Parellada

Ageing   3 years in contact sur lees

Tasting note   Clear and brilliant pale gold. Aromas of ripe fruits (baked apple, quince, peach syrup), autolytic and Ageing (fine pastry, vanilla). Intense attack, flavors of ripe green and stone fruits (apple and peach), kernel (hazelnut), voluminous with good balance. Creamy mousse. Fine and distinguished finish.

Canals Nadal Brut Nature Gran Reserva

Blend Xarel·lo, Macabeo and Parellada

Ageing   Minimum 42 months sur lees

Tasting note  Medium gold. Bouquet dominated by aromas of ageing (pastry, praline and bread). Ripe fruit (baked apples, dried apricot). The mousse is extremely smooth, and the palate complex and intense (ripe green fruit, hazelnut, pastry) with excellent balance between the fruit flavors, full body and lively acidity. A cava full of sensations. Perfect throughout a meal.

Canals Nadal Brut Rosé

Blend  100% Trepat

Ageing   Minimum 12 months sur lees

Tasting note   Light salmon. Well integrated bubbles, delicate mousse. Aromas of red fruit (sweet strawberry and fresh raspberry) backed by lighter notes of pastry. Intense palate of fresh berries, with a long finish of strawberry. Excellent tactile presence of the carbonic gas.

Canals Nadal Gran Vintage

Blend   Chardonnay (40%) fermented & aged in French oak barrels, Macabeo (30%) and Xarel·lo (30%).

Ageing   Portion of the Chardonnay aged 6 months in French oak + minimum 18 months sur lees

Tasting note  Pale lemon. Clean, intense nose with typical aromas of Chardonnay, floral and fruity (stone fruits), with some notes of tropical fruit (mango), and spice. Delicate palate of fine pastry and spice from the oak. The acidity is nicely balanced with the elegant creaminess of the mousse and body of the assemblage.

Canals Nadal Cupada Selecció

Blend    Xarel·lo, Macabeo and Parellada

Ageing    Portion of the Xarel·lo aged 6 months in French oak barrels + minimum 2 years in contact sur lees

Tasting note   Pale gold. Complex nose, with excellent evolution in the glass: from coco and vanilla
aromas, to fresh peach and preserved pear and finally floral notes of rose oil. The palate is unctuous, long and expressive. Clear fruit flavors of both fresh (peach) and preserved (pear) fruits, with well-integrated light toasted
notes from the oak.Perfect throughout a meal.
